I love Ireland and your posts remind me of the beautiful green isle, warm welcoming people, and delicious food. I will remember always arriving late one night into an Irish pub, hoping to have a quick small snack before heading to the hotel. The lovely staff rushed to serve us a beautifully prepared meal, ignoring the fact that they were about to close the kitchen for the night! As a pastry chef graduate of the French Culinary Institute, NYC, I found the meal a real treat, simple, fresh, and delicious. Thank you for your posts which retrieve these wonderful memories. https://janetpiedilato.substack.com/
