Irish Shepherd’s Pie (the real one, not the stuff they eat in cottages)

Irish Shepherd’s Pie (the real one, not the stuff they eat in cottages) is a dish consisting of two mandatory ingredients: potatoes and lamb. The ground beef version is also very delicious, but does not qualify as “Shepherd’s Pie” since shepherds raise sheep, not cows. The mystery remains as to why the beef version is referred to as “Cottage Pie,” rather than “Cowboy Pie” or “Rancher’s Pie.”
