Lili Forberg, one of Ireland's top foodie Instagrammers, recently took to social media to share her spin on a seasonal favorite that’s perfect for this time of year.
For Lili, the sight of Barmbrack (Irish: bairín breac) on supermarket shelves signals the start of autumn, sparking a craving she can’t ignore—so she simply has to bake it herself.
Ready to bake Lili's version of Barmbrack? Here's her recipe:
Ingredients:
200g (about 1 cup) raisins
1 cup (240ml) black tea (Lili prefers Earl Grey)
1/3 cup (70g) brown sugar
1 tsp vanilla extract
1 large egg
1 tsp mixed spice
80g butter
250g self-raising flour
1/2 tsp salt
Instructions:
Soak the raisins in a cup of black tea.
Once the mixture has cooled slightly, add the egg.
Stir in the remaining ingredients.
Bake at 170°C for 50-60 minutes, until golden brown and a skewer comes out clean.
Let it cool completely before slicing – though Lili says it’s delicious even if it crumbles a little!
