Illness Kept Her Away From The Kitchen – But Brother Hubbard's Breakfast Eggs Inspired Her Culinary Revival!
Niamh King MacFarlane Shares The Recipe Of Her Favourite Dublin Breakfast Which Inspired Her To Start Cooking Again After Illness.
“The very first time I ever ate Eggs Menemen was about ten years ago in the incredibly brilliant Brother Hubbard on Capel Street in Dublin’s City Centre! I kept returning just to eat this amazing dish, even after I taught myself how to make it. There is just something about having your breakfast handed up to you on a plate, and the great thing about Dublin is there is always somewhere to go to treat yourself to a lovely breakfast, no matter what you are looking for, and Brother Hubbard was the spot for something a bit different.
It had been a while since I had made this -long term illness can rob you of so much joy in your life, including cooking- so as I had the ingredients needed, and a fresh box of eggs only delivered on Friday, I decided to whip some up.”
Normally I’d have made my own coriander flatbreads for this, but my super soda was a perfect pairing for it (plus I’d no natural yoghurt).
